MANDARIN SALAD

Ingredients:


1/3 cup Sliced almonds

1 tablespoon Sugar

3 cups Bite-size pieces lettuce

3 cups Bite-size pieces romaine

2 medium Stalks celery -- sliced

2 medium Green onions (with tops) -- Thinly sliced (about

11 ounces mandarin oranges -- Drained

-----SWEET-AND-SOUR DRESSING-----

1/4 cup Olive or vegetable oil

2 tablespoons Sugar

2 tablespoons Vinegar

1 tablespoon Chopped fresh parsley

1/2 teaspoon Salt

1 teaspoon freshly ground pepper

1 Dash red pepper sauce
 

Preparation / Directions:


Cook almonds and sugar over low heat, stirring constantly, until sugar is melted and nuts are coated; cool and break apart. Toss all ingredients. SWEET-AND-SOUR DRESSINGShake all ingredients in tightly covered container.
