Frosty Strawberry Squares

Ingredients:


----Crust

1 cup sifted flour

1/4 cup brown sugar

1/2 cup chopped walnuts

1/2 cup butter or margarine -- melted

---Filling

2 large egg whites

1 cup sugar (see note)

2 cups sliced fresh strawberries (see note)

2 tablespoons lemon juice

1 cup whipping cream -- whipped

1 pints strawberries (garnish)
 

Preparation / Directions:


For crust: Stir together all ingredients and spread evenly in a shallow baking pan. Bake at 350 degrees for 20 minutes, stirring occasionally. Cool and stir to break up into a crumb mixture. Sprinkle 2/3 of the crumb mixture into a 9 x 13 x 2-inch pan. For filling: In a large bowl, combine egg whites, sugar, strawberries and lemon juice; beat with an electric mixer on high speed until stiff peaks form. Fold in whipped cream. Spoon whipped cream mixture over crumbs. Top with remaining 1/3 of the crumb mixture. Freeze for 6 hours or overnight. Cut in 12 squares. Garnish with strawberries. Note: You may substitute 2/3 cup sugar and 1 (10-ounce) package of frozen strawberries, partially frozen.
