Figs With Ricotta

15 medium figs
1 cup ricotta cheese
2 tablespoons ground almonds
1 teaspoon grated lemon rind
1 teaspoon grated orange rind
1 teaspoon vanilla extract
1 teaspoon almond extract
1/4 cup honey
1/4 cup chopped toasted pistachios

Preparation / Directions:

Remove stems from figs. Cut almost in half, open up to stuff. In food processor mix together ricotta, ground almonds, lemon and orange rind, vanilla and almond extract and honey. Process to blend. Stuff each fig with flavored ricotta. Garnish with toasted nuts. Approximately 4-6 minutes.
