Baked Pineapple

Ingredients:


2 tablespoons cornstarch

1/4 cup water

2 large eggs -- beaten

15 1/4 ounce crushed pineapple -- undrained

1/2 cup sugar

1 teaspoon vanilla

2 tablespoons Butter

1 teaspoon Ground cinnamon
 

Preparation / Directions:


Combine cornstarch and water; stir until smooth. Add to eggs, and blend well. Add pineapple, sugar, and vanilla; mix well. Pour into a lightly greased 1 1/2 qt. casserole; dot with butter and sprinkle with cinnamon. Bake at 350 F for 1 hour.
