Grandma Evelyn's Lemon Butter Icing

Ingredients:


1 large egg yolk

2 tablespoons lemon juice

2 tablespoons riverview butter -- melted

1 teaspoon powdered sugar
 

Preparation / Directions:


Beat egg yolks with fork, add 1/4 cup sugar, lemon juice, butter. Add enough powdered sugar to make icing of desired consistency to spread. Beat until creamy.
