12 pounds potato
2 cups sour cream
3/4 cup parsley
1 teaspoon garlic
6 large egg
1/3 cup chives
9 teaspoons rendered bacon fat
1 teaspoon dry mustard
1 teaspoon ground thyme
1/4 teaspoon salt
1/4 teaspoon white pepper
1 dash cayenne
1/2 cup flour
3 tablespoons corn oil

Preparation / Directions:

combine potatoes, sour cream, parsley, garlic, eggs, chives, bacon fat, dry mustard, and thyme-mix well season to taste with salt, pepper, and cayenne form into 1-inch diameter balls, dredge in flour heat oil to 375 degrees add balls in small batches and fry for 1 minute, until golden transfer to a hotel pan, keep warm repeat with remaining balls serve hot
