Eggplant Caviar

Ingredients:


1 medium eggplant

1/2 teaspoon salt

1/4 teaspoon pepper

2 tablespoons olive oil

2 tablespoons lemon juice

2 tablespoons finely chopped scallion

2 tablespoons finely chopped parsley

1 clove garlic -- finely chopped
 

Preparation / Directions:


Bake eggplant whole and unpeeled for 1 hour at 450F. Peel. Place eggplant in a bowl. Chop or mash. Add all remaining ingredients. Mix well. Chill. Recipe Source: THE ART OF FRENCH COOKING by Fernande Garvin
