2 tablespoons red wine vinegar
2 teaspoons garlic
1/2 teaspoon bay leaf
1/4 teaspoon salt
1/4 teaspoon pepper
1 pound firm white fish fillet
1 quart corn oil
1/3 cup flour
1/4 cup parsley
2 Medium lemon

Preparation / Directions:

Combine vinegar, garlic, bay leaf, and chile powder in a food processor process to a smooth paste transfer to a bowl season to taste with salt and pepper cut bone from fillets and cut into 16 cubes add to paste and gently stir to coat evenly cover and chill overnight heat oil to 375 degrees in a deep fryer or dutch oven dredge fish in flour add to hot oil and deep fry quickly, until golden drain on paper towels garnish with parsley and lemon wedges serve hot
