Crunchy Cheese Crumb Haddock

1 pound frozen haddock or other mild white fish
1 ounce whole wheat bread crumbs
1 tablespoon butter -- melted
1/3 cup cheddar cheese -- shredded
2 ounces mayonnaise
1 dash hot pepper sauce
1 dash parsley

Preparation / Directions:

Cut fish into four ounce portions and place in a lightly greased pan. Mix crumbs, emlted butter and cheese. Combine remaining ingredients and spread on each fish portion. Top with the crumb mixture. Bake uncovered at 400 for 20 minutes. Notes: I just thaw the fish enough to cut into portions and let it sit for the few minutes that it takes to mix the toppings.
