Ingredients:

11 1/2 pound Alaska salmon fillet skin on, thawed if necessary and cut into 1 1/4 inch strips

2 tablespoons honey

1/2 teaspoon ginger

1/4 cup green onions chopped

1 teaspoon lemon peel

---Marinade:

1/4 cup canola oil

1/4 cup lemon juice

2 tablespoons soy sauce

Preparation / Directions:

1. Mix marinade ingredients together in large shallow glass dish. Add Alaska salmon strips and coat well. Refrigerate 2-6 hours, turning several times. 2. Remove salmon strips from marinade; discard marinade. 3. Place salmon, skin side up, on medium-hot grill for 3 minutes. Turn carefully, and continue to cook, skin side down, for an additional 3-4 minutes or until fish flakes easily when tested with a fork. 4. To remove strips from grill, run a spatula between the skin and the salmon. This will provide a plate-ready, skinless strip.
