Stuffed Flounder

Ingredients:

1 cup onion -- minced
1 1/2 cups celery -- minced
1/8 bunch parsley -- chopped
2 tablespoons flour
1 cup dry white wine
1/2 cup lump crabmeat
1 teaspoon salt and pepper -- to taste
18 large peeled -- boiled shrimp
1/2 cup minced green onion
30 milliliters garlic -- minced
1/2 pound oleo
1 cup milk
1/2 cup chopped boiled shrimp
2 1/2 cups bread crumbs
6 fillets flounders
 

Preparation / Directions:

Sauté onion, shallots, celery, garlic and parsley in oleo. Add flour and blend well. Gradually stir in milk and wine, cooking until thickened. Add chopped shrimp and crabmeat and thicken further with bread crumbs. Season to taste. Split each flounder and fill with this dressing. Top each with 3 whole shrimp. Place under broiler about. 20 minutes or until fish is cooked through.
