Hearty Halibut

Ingredients:


1 spray vegetable oil spray

2 pounds halibut fillets (or other firm fish steaks)

2/3 cup thinly sliced onion

1 1/2 cups sliced fresh mushrooms

1/3 cup chopped tomato

1/4 cup chopped green bell pepper

1/4 cup chopped fresh parsley

3 tablespoons chopped pimiento

1/2 cup dry white wine

2 tablespoons fresh lemon juice

1/4 teaspoon dill weed

1/4 teaspoon black pepper -- freshly ground

8 medium lemon wedges -- for garnish
 

Preparation / Directions:


Preheat oven to 350F Lightly spray a covered baking dish with vegetable oil. Rinse fish and pat dry. Arrange onion slices in the bottom of prepared baking dish. Place fish on top. Set aside. In a bowl, combine remaining vegetables. Stir to mix well, and spread over fillets. In a small bowl, combine wine, lemon juice, dill, and black pepper. Pour over fish and vegetables. Cover and bake 25 to 30 minutes, or until fish flakes easily when tested with a fork. Garnish with lemon wedges.
