Creole Baked Fish

1 medium onion -- chopped
2 tablespoons shortening
2 cups cooked whole tomatoes
1 piece bay leaf
2 pounds fish filet
1/4 cup bell pepper -- chopped
2 tablespoons flour
1 teaspoon salt
1/8 teaspoon pepper
1 package frozen kernel corn or>>>
1 1/2 cups cooked corn

Preparation / Directions:

Sauté onion and green pepper in shortening until tender. Add flour and blend. Then add tomatoes, salt, pepper, and bay leaf; bring to a boil. Cover and simmer 10 mi. Add corn and cook over low heat 10 minutes longer, stirring occasionally. Remove bay leaf. Arrange fish in greased shallow baking dish. Cover with vegetable mixture and bake at 400F for 30 min or until done.
