2 pounds salt cod soaked overnight
4 medium potatoes diced
4 medium onions chopped
2 cloves garlic chopped fine
1 large pimento chopped
4 tablespoons olive oil

Preparation / Directions:

Drain cod and rinse several times to remove salt. Heat oil and sauté' onions, garlic, and pepper until vegetables are soft. Add cod and potatoes. Simmer covered for about 30 minutes or until fish is cooked. Season with salt and pepper to taste. Garnish with sprigs of parsley. Serve with Portuguese or Italian brea
