fabulous and quick mahi-mahi meal | |||||||||||
Ingredients:

Preparation / Directions:1.Salt and marinate fillets in fridge for at least one hour (longer for stronger taste)
2.Melt butter in large skillet over medium heat
3.Place fillets with marinade juices in skillet and cover
4. Add frozen veggies, making sure to coat them with the sauce already in the skillet
5. Re-cover and cook for about 10-13 minutes
Fish will be ready when it is opaque and flakes easily with fork.
6. Serve over rice and enjoy! (I leave it out for a very low carb meal!)
