Teriyaki Mahi Mahi

fabulous and quick mahi-mahi meal
 

Ingredients:

4                       fresh mahi mahi fillets
1         package       Oriental blend frozen vegetables
(I have also used fresh veggies: string beans, snow peas and onions)
1/2       cup           sliced red and yellow peppers
2         tbs           butter

Marinade:
                        Teriyaki sauce
1         Juice         large orange
1         Splash        pinapple juice
                        chooped garlic and pepper to taste
(Combine ingredients in bowl w/wisk)
 

Preparation:

1.Salt and marinate fillets in fridge for at least one hour (longer for stronger taste) 2.Melt butter in large skillet over medium heat 3.Place fillets with marinade juices in skillet and cover 4. Add frozen veggies, making sure to coat them with the sauce already in the skillet 5. Re-cover and cook for about 10-13 minutes Fish will be ready when it is opaque and flakes easily with fork. 6. Serve over rice and enjoy! (I leave it out for a very low carb meal!)
