Crock Pot Enchiladas

Tex-Mex recipe that can use ground meat or chicken.
 

Ingredients:


1 package Corn Tortillas

1 pound Lean Ground Beef (or Chicken Breast)

1 package Taco Seasoning

1 1/4 cup water

1 jar chuncky Salsa

1 can cream of Mushroom Soup

1 can Cream of Chicken Soup

16 ounces Mexican Blend cheese
 

Preparation / Directions:


Brown ground meat (or chicken) in pan. Drain excess fat. Add taco seasoning and water, simmer for 15 minutes on low. In medium bowl mix next three ingredients together and all but 3/4c. of cheese. Cut tortillas (about 15) into quarters, and layer enough tortillas to cover bottom of crockpot. Scoop a layer of meat on top of tortillas. Next, add the soup mixture. Continue layering ingredients until you run out. Put a layer of tortillas and cheese on top. Cover and cook on High for 45 minutes to 1 hour.
