Kentucky Derby Cheese Dip

2 pounds grated sharp cheddar cheese
1/2 medium onion -- chopped fine
2 cloves garlic -- chopped fine
1 teaspoon Worcestershire sauce
1/4 teaspoon cayenne pepper
12 ounces flat beer

Preparation / Directions:

Heat the beer to simmer. Blend all ingredients with electric mixer. Chill. Serve with crackers or crusty bread chunks. This will keep for months, can be done ahead and will freeze very well. Makes 5 cups.
