Chick Pea and Tahini Dip

8 ounces soaked chick peas
2 medium lemons -- juiced
2 cloves garlic crushed
5 tablespoons olive oil
2 tablespoons tahini
1 teaspoon salt and pepper
2 tablespoons water
1 teaspoon paprika and parsley

Preparation / Directions:

Drain chick peas, cover with water in a pot and cook for 60 minutes. Drain and cool. Place in a processor with lemon juice, garlic, oil, tahini and salt and pepper. Blend till smooth adding more water if needed. You should have a thick paste. Check seasonings. Garnish with paprika and parsley. Serve with pita bread.
