3 medium firm green-tipped bananas
2 tablespoons flour
1/4 cup butter
1 tablespoons lemon juice
3 tablespoons powdered sugar
1/4 cup light rum -- warmed

Preparation / Directions:

Peel bananas; cut in half lengthwise and then in half crosswise. Cot with flour. Heat 2 tbls. of the butter in the blazer of a chafing dish. Place over high heat of alcohol burner and cook until butter is melted. Add bananas and cook until lightly browned; turn to brown both sides. Add the remaining 2 tbls. butter as needed. Sprinkle with lemon juice and sugar. Pour rum over bananas and ignite. Serve immediately.
