Ingredients:


---Mix together:

5 tablespoons vegetable oil (canola or sunflower)

4 tablespoons tamari

3 tablespoons brown sugar

2 tablespoons tomato sauce

4 cloves garlic -- crushed

1 tablespoons dried parsley or finely chopped fresh parsely

1 tablespoons coriander

1 tablespoons cumin

1 tablespoons Jamaican pimento (allspice)

1 tablespoons ground ginger

1 teaspoon tabasco sauce or other hot sauce

1 teaspoon very finely chopped jalpeo or habanero pepper

1 teaspoon salt to taste

1 teaspoon black pepper to taste

1 teaspoon crushed red chilis to taste
 

Preparation / Directions:


This is a wonderful cooking sauce. You can marinate chicken or meat in it before sauteing, grilling, broiling or baking. Dribbled over stir-fried vegetables, it makes a great dish to eat over rice. Notes: This recipe is derived from Columbo, Jerk seasonings, and other Caribbean curries.
