Granny's Peanut Cookies

Ingredients:


1 cup margarine

1 cup granulated sugar

1 cup brown sugar

2 large eggs -- beaten

2 1/2 cups flour

1 teaspoon baking soda

1 teaspoon baking powder

1/2 teaspoon salt

1 cup old-fashioned oats

1 cup crumbled corn flakes

1/2 pound spanish peanuts
 

Preparation / Directions:


Mix together margarine and sugars. Add eggs and mix well. In a separate bowl, mix together remaining ingredients. Gradually add dry ingredients to the creamed mixture; mix well. Roll cookie dough into 2-inch diameter tubes. Wrap with foil, then place into freezer until frozen, 2 hours or more. Preheat oven to 350 degrees. With a sharp knife, cut into paper thin slices about 1/8 inch thick. Place on a greased cookie sheet. Bake at 350 degrees for 8 minutes. The cookies should be crispy-crunchy.
