Dipped Peanut Butter Sandwich Cookies

1/2 cup creamy peanut butter
4 ounces ritz crackers -- 1 sleive-see
1 cup white chocolate chips -- or semisweet chocolate chips -- or milk chocolate chips
1 tablespoon shortening

Recipe by: Taste of Home Magazine, December/January 1994 Preparation Time: 2:00 Note: 1 sleeve (4 ounces) round butter-flavored crackers Spread peanut butter on half of the crackers; top with remaining crackers t make sandwiches. Refrigerate. In a double boiler over simmering water melt choice of chocolate chips and shortening, stirring until smooth. Dip sandwiches and place on waxed paper until chocolate hardens.
