Brown Sugar Refrigerator Cookies

1/2 cup vegetable shortening
1 cup brown sugar
1 large egg
1/2 teaspoon vanilla
1 3/4 cups flour
1/2 teaspoon baking soda
1/8 teaspoon salt

Preparation / Directions:

In a medium mixing Bowl, beat together shortening, sugar, egg, and vanilla. Blend flour, soda, and salt; mix in thoroughly. Form into rolls about 2 1/2 inches across, wrap securely and refrigerate until thoroughly chilled and firm. Slice 1/8th inch thick and bake on ungreased cookie sheet 8 to 10 minutes at 400. Remove from pan immediately and cool on wire rack. These freeze very well either before or after baking
