Ingredients:


6 pounds roma tomato

1 cup onion

2 teaspoons garlic puree

1 cup apple cider vinegar

1 cup sugar

1 teaspoon ground coriander

1/2 teaspoon cayenne

1/2 teaspoon freshly ground nutmeg

1/4 teaspoon ground cinnamon

1 piece bay leaf

1 teaspoon kosher salt
 

Preparation / Directions:


combine tomatoes, onions, and garlic in a food processor process to a fine puree strain mixture through a fine chinois, into a saucepan add remaining ingredients-mix well place over a low flame and simmer for 2 hours, until reduced to 4 cups remove and discard bay leaf cool in a water bath cover and chill for up to 20 days serve slightly chilled or at room temperature
