Clam Chowder 6

Ingredients:


4 teaspoons margarine

2 tablespoons celery -- chopped

1 cup onions -- diced

2 tablespoons flour

2 teaspoons summer savory/thyme

1 can minced baby claims -- (10 oz) drained

20 ounces potatoes -- peeled and diced

1/2 cup water -- (1/2 to 1)

1/4 teaspoon celery salt -- salt, white pepper

1 1/2 cups 1% milk

1 can evaporated skim milk

1 bunch chopped parsley for garnish
 

Preparation / Directions:


Method: Melt butter in large saucepan; add celery and onions. Saut‚ until onions have softened, about 5 minutes. Sprinkle in flour and summer savory or thyme , stir until blended. Slowly stir in reserved claim liquid; add potatoes, water, celery salt, salt, and pepper. Bring to a boil, cover and simmer for 10-15 minutes. Add clams, milk and evap. skim milk. Heat to below simmer. DO NO BOIL. Garnish with the parsley.
