CARIBBEAN CHICKEN

Ingredients:


4 medium Chicken drumsticks (about 1

30 ounces black beans Undrained

1 tablespoon Grated gingerroot or -- 1 ts Ground ginger

1 teaspoon Finely shredded lime peel

2 tablespoons Lime juice

1/2 teaspoon Salt

1 Clove Garlic -- finely chopped

1 cup Cubed mango or

8 ounces peach slices Drained and cut up

2 medium Green onions -- thinly sliced
 

Preparation / Directions:


The Caribbean flair in this dish comes from black beans, lime, gingerroot. Heat oven to 375 degrees. Place chicken pieces, skin sides up, in ungreased rectangular baking dish, 13 X 9 X 2 inches. Bake uncovered 40 min Remove excess fat. Mix remaining ingredients. Spoon over and around chicken. Cover and bake 30 minutes longer or until juices of chicken run clear. To Microwave: Arrange chicken pieces, skin sides up and thickest parts to outside edges, in rectangular microwavable dish, 12 X 7-1/2 X 2 inches. Cover tightly and microwave on high 9 minutes. Remove excess fat. Rotate dish 1/2 turn. Mix remaining ingredients. Spoon over and around chicken pieces. Cover tightly and microwave on high about 8 minutes longer or until juices of chicken run clear. Let stand 3 minutes.
