Chicken-Vermicelli Salad

8 ounces uncooked vermicelli
1 recipe Ginger Dressing
2 cups cooked chicken or turkey -- cubed or shredded
1 1/2 cups carrots -- shredded
1 cup cucumber -- coarsely chopped
1/2 cup jicama or water chestnuts -- coarsely chopped
1/4 cup fresh cilantro or parsley -- chopped

Preparation / Directions:

Break vermicelli into halves. Cook vermicelli as directed on package; except omit salt; drain. Rinse with cold water; drain. Prepare Ginger Dressing in large bowl. Add vermicelli and remaining ingredients; toss. Spoon onto salad greens, it desired.
