Island Chicken Scampi

1/2 cup butter
1 1/2 pounds chicken breasts boneless, skinless, cut into strips
5 cloves garlic minced
1/2 teaspoon cayenne pepper
1/2 teaspoon salt
1 tablespoons orange juice
1 tablespoons lemon juice
1 tablespoons lime juice
1 tablespoons parsley chopped fresh

Preparation / Directions:

In a large skillet, melt the butter over medium heat. Add the chicken, garlic, cayenne pepper, and salt and cook for 5 to 6 minutes, or until no pink remains in the chicken, stirring occasionally. Add the orange, lemon, and lime juices and cook for 1 to 2 minutes, or until the sauce thickens slightly. Sprinkle with the parsley, toss, and serve. Good served over rice.
