Skillet Chicken Salad

Ingredients:


3 tablespoons butter

6 medium boned and skinned chicken breasts -- (6 oz each) cut into 3x1/2 inch strips

1/4 teaspoon salt

1/4 teaspoon pepper

1/3 cup sour cream

1/3 cup mayonnaise

1/4 cup celery -- sliced 1/4 inch thick

1/4 cup chopped green onions

1/4 cup chopped fresh parsley

1 tablespoon dijon mustard

1 tablespoon lemon juice

1/2 teaspoon mustard seed

8 pieces lettuce leaves

1 cup cherry tomato halves
 

Preparation / Directions:


In 10 inch skillet, melt butter until sizzling; stir in chicken, salt and pepper. Cook over medium-high heat, stirring occasionally until chicken is browned and fork tender (10-15 minutes). Stir in all reminding ingredients, except lettuce leaves and cherry tomatoes. To serve, place lettuce on platter or individual salad plates, top with chicken salad. Arrange tomatoes around salad.
