Preparation:
In 10 inch skillet, melt butter until sizzling; stir in chicken, salt and pepper. Cook over medium-high heat, stirring occasionally until chicken is browned and fork tender (10-15 minutes). Stir in all reminding ingredients, except lettuce leaves and cherry tomatoes.
To serve, place lettuce on platter or individual salad plates, top with chicken salad. Arrange tomatoes around salad. |
