Scarborough Chicken

Ingredients:

4 medium chicken breasts
1 package coating mix for chicken
1 teaspoon parsley flakes
1/2 teaspoon rosemary -- crushed
1/2 teaspoon thyme leaves
1 can golden mushroom soup
1/2 cup chicken broth
1/2 cup dry sherry
8 ounces mushrooms -- drained
 

Preparation / Directions:

Dredge chicken with coating mix and place in a lightly greased 13 x 9 pan. Sprinkle chicken with herbs and bake at 400 for 30 minutes. Combine soup, broth, and sherry in a small bowl; add mushrooms. Stir well and pour over chicken. Bake 30 minutes longer or until chicken is done. Serve over rice.
