Preparation / Directions:
Cut each chicken into 8 pieces. Put in a thick saucepan with the offal. Add: salt, pepper, ginger, onions, saffron, parsley, coriander, cinnamon and water. Cook at a moderate heat, turning the meat from time to time (about 45 minutes). Then take it off the heat. In the sauce pan, still on the heat, put the washed prunes, and 15 minutes later add the sugar and the cinnamon. Boil the sauce down until it is syrupy. Meanwhile skin almonds and fry them quickly in the oil for a few minutes. Arrange the pieces of the chicken in a dish; add the prunes and their heavy syrup. Spread fried almonds and grilled sesame seed on the top.
