Red Chicken Chili

Ingredients:

1 Pound boneless skiness chicken breast cut int 1/2 inch pieces
1 Cup chopped onions
2 Cloves garlic -- minced
2 Tablespoons oil
2 Teaspoons chili powder
1/2 Teaspoon ground cumin
1 Can spicy vegetable juice -- (12 ounce)
1/2 Cup chicken broth
1 Can pinto beans -- (16 ounce) undrained
 

Preparation / Directions:

In heavy pot over medium heat,cook chicken,onions and garlic in hot oil for 5 minutes,or until chicken is thoroughly cooked.Stir in chili powder,cumin vegetable juice,broth and pinto beans.Heat to boiling.Reduce heat and simmer for 20 to 30 minutes Note if chili is to thick,add more chicken broth
