Persian Honey-Spiced Chicken

Ingredients:


4 medium skinless boneless chicken breast

2 tablespoons honey

--- dukkah -- (spice mix) ---

2 tablespoons toasted sesame seeds

1 tablespoon toasted coriander seeds

3 tablespoons hazelnuts -- toasted and skinned

1/4 teaspoon salt

--- MARINADE ---

1/4 cup lemon juice

1/2 cup olive oil

1/2 teaspoon salt

1/4 teaspoon pepper

1 teaspoon dried oregano

1 clove garlic -- minced
 

Preparation / Directions:


Make the marinade: Combine in a flat bowl all the marinade ingredients. Cut the chicken into 1-inch cumbes. Thread the chicken onto 8 bamboo skewers. Place the chicken skewers in a flat pan with the marinade. Marinate for half and hour. Make the dukkah (spice mix): Combine in a mortar the dukkah ingredients. Grind them with a pestle untila crumbly, cornmeal-like texture is achieved. Preheat the barbecue to medium-high or turn on the broiler and adjust the oven rack to 6 inches below the heating element. Barbecue or broil the skewers for 3 to 5 minutes on each side, or until thoroughly cooked. Drizzle with a small amount of honey. Sprinkle with the dukkah.
