Karen's Paella

Ingredients:


1 1/2 pounds chicken breasts -- skinless

1 1/2 pounds chicken thighs -- skinless

1/4 pound hot italian turkey sausage

1/4 cup olive oil

1 clove garlic -- minced

16 ounces canned tomatoes -- drained

2 cups rice -- uncooked

4 cups chicken stock

1/2 teaspoon saffron

6 whole clams -- rinsed, cleaned

12 large shrimp

1 cup frozen sweet peas

1 teaspoon salt -- to taste

1/2 teaspoon black pepper -- to taste
 

Preparation / Directions:


Saut‚ chicken, pork, and sausage in oil. When brown, add garlic and tomatoes. In large, shallow baking or paella pan combine rice, broth, and saffron; top with chicken mixture. Cover and bake for 50 minutes. Add clams, shrimp, and peas. Cook an additional 15 minutes.
