Groundnut Stew 1

Ingredients:


1 medium cut up pigs foot

1 teaspoon salt and pepper to taste

1 medium chicken -- (2 lb.) cut up

1/2 cup onion -- sliced

1/2 cup chopped green pepper

1 teaspoon thyme or other spice

1/3 cup peanut butter

1/2 cup tomato paste

2 medium hot chili peppers -- (optional)
 

Preparation / Directions:


Wash sections of pig's foot thoroughly; season with salt and pepper. Wash chicken pieces; add seasoning. Steam pig's foot for 20 minutes. Add chicken and stir. Cover, cook for 15 minutes. Add onions, green pepper and a small amount of other seasoning. Mix peanut butter in bowl with hot water and stir into chicken. Add tomato paste and continue to cook, uncovered. Ground nutmeats is a thick sauce. Stir to prevent sticking. Serve over hot rice. If desired, sprinkle with grated coconut, cooked okra or ground peanuts
