4 medium boneless -- skinless chicken breast halves, 4oz
1/2 cup egg beaters healthy real egg substitute
1/2 cup seasoned dry bread crumbs
1 1/2 teaspoons vegetable oil
1 tablespoons lemon slices and parsley

Preparation / Directions:

Pound chicken breasts to flatten slightly. Dip the chicken breasts into egg beaters; coat with bread crumbs. Cook chicken in oil in non stick skillet over medium high heat for 3 to 5 minutes on each side or until browned and cooked through. Garnish with lemon and parsley if desired.
