Preparation / Directions:To make dressing, puree plums, juice, vinegar, ginger, sugar and soy sauce in food processor with metal blade or blender. With motor running, slowly pour in oil.
To assemble salad, either toss chicken, cucumber, plums, lettuce and avocado with dressing. Or, arrange a bed of lettuce on each plate and top with sliced chicken, cucumbers, avocados and plums. Pass dressing separately.
