Chicken Salad With Fresh Plums

Ingredients:

                        plum dressing
  2                     ripe plums -- pitted
  3        tablespoons  orange or apple juice
  1         tablespoon  plus 1 teaspoon cider vinegar
     1/2      teaspoon  powdered ginger
  1           teaspoon  sugar
  2          teaspoons  soy sauce
     1/4           cup  vegetable oil
                        salad
  4                     ripe plums -- pitted and
                        quartered -- (santa rosa
                        -- preferred)
  2 1/2           cups  chopped or sliced cooked chicken -- (2 1/2 to 3)
  1              small  cucumber -- sliced
  1       small   head  romaine lettuce -- torn into bite-size
  1                     avocado -- peeled, pitted and
                        sliced
 

Preparation:

To make dressing, puree plums, juice, vinegar, ginger, sugar and soy sauce in food processor with metal blade or blender. With motor running, slowly pour in oil. To assemble salad, either toss chicken, cucumber, plums, lettuce and avocado with dressing. Or, arrange a bed of lettuce on each plate and top with sliced chicken, cucumbers, avocados and plums. Pass dressing separately. Prep Time: 15 minutes Makes: 4 servings
