Chicken And Sausage Stew

2 pounds hot sausage -- peeled and cut into 1 inch-pieces
2 medium green peppers -- cut into strips
1 tablespoon garlic chopped
2 cans whole tomatoes in juice
1/2 teaspoon pepper
1 tablespoon chopped parsley
1 cup shredded cheddar cheese
2 pounds boneless chicken breast -- trimmed and sliced into 2 inch-strips
2 medium onions -- cut into strips
1/2 cup dry white wine
1 teaspoon basil
1/2 teaspoon thyme
1/4 teaspoon salt

Preparation / Directions:

In large soup pot lightly coated with oil, saute sausage for 2 minutes. Add chicken and saute both until almost done. Add peppers, onions, garlic, basil, pepper, thyme, parsley and salt. Cook until vegetables begin to soften. Add white wine and bring to a boil. Add the juice from the whole tomatoes, chop the tomatoes and add. Reheat when ready to serve. Garnish with shredded cheddar cheese.
