Uncle Ben's Traditional Paella

1 whole chicken -- cut into 8 pieces
1 medium Onion -- chopped
1 teaspoon salt and pepper to taste
1/4 cup vegetable oil
1 pound mussels
1 pound squid
1 pound octopus
6 whole prawns
18 large clams
5 1/2 cups chicken broth
1/2 cup dry white wine
1 dash saffron -- (for coloring)
3 cups rice
1 cup red peppers -- cut in strips
1 cup frozen peas -- thawed

Preparation / Directions:

In a large pot, saute' the chicken, onion, salt and pepper in 1/4 cup of vegetable oil. Stir in assorted seafood, starting with the most dense and ending with the most tender, Add chicken broth, white wine and saffron. Stir in rice and bring to a boil. Reduce heat, cover and simmer 20 - 25 minutes. Decorate with red pepper strips and pea
