Sweet and Sour Chicken

1 pound chicken or pork -- cut into small pieces
1 medium onion -- diced
4 cloves garlic -- sliced
2 medium carrots -- thinly sliced
1 medium green pepper -- chopped
1 can pineapple -- undrained
1/4 cup wine vinegar
3 tablespoons brown sugar
3 tablespoons catsup
3 tablespoons soy sauce
1 tablespoon cornstarch
1 teaspoon ginger root -- grated

Preparation / Directions:

Brown meat in 1 tablespoon of oil in wok. Add onion and garlic, turn heat to low and simmer 10 minutes. Add carrots and green pepper. Stir fry over high heat to cook quickly and evenly. Combine pineapple and remaining ingredients. Stir until fairly smooth and no large lumps of cornstarch remain. Stir into meat and vegetables. Turn heat in wok to low and cover. Simmer 10 minutes more. Serve over steamed rice. FREEZING: Cook everything but rice; freeze in bag. Thaw, reheat in microwave and cook rice for serving.
