Chicken And Chili Quesadillas

4 ounces cheddar cheese -- shredded
4 ounces monterey jack cheese -- shredded
1 Medium red pepper -- chopped
1 Medium green pepper -- chopped
3 Medium green onions -- chopped
2 tablespoons cilantro -- snipped
1 Medium chicken breast -- cooked and chopped
8 tortillas flour tortillas -- (6-inch)
1 package sour cream
1 jar fresh tomato salsa

Preparation / Directions:

1. Combine cheeses, red and green peppers, green onions, cilantro and chicken in a large mixing bowl. Place four of the tortillas on an ungreased baking sheet. Spread about 1 cup chicken mixture evenly over each tortilla. Top with remaining tortillas and press together lightly. 2. Bake in a 375F oven for 12 to 15 minutes or until tortillas are golden brown and cheese is melted. Cut into quarters to serve. Serve with sour cream and Fresh Tomato Salsa. Makes 8 servings.
