Cheese Italian Chicken Pie

Ingredients:

1/3 cup grated parmesan cheese
1 1/2 cups chicken -- cooked and diced
1 1/4 cups mozzarella -- shredded
1/2 teaspoon oregano leaves -- dried
1/2 teaspoon basil leaves -- dried
1/2 teaspoon garlic powder
6 ounces tomato paste
1/2 cup bisquick baking mix -- (can use reduced fat)
1 cup milk
1/4 teaspoon pepper
2 large eggs
 

Preparation / Directions:

Heat oven to 400. Grease pie plate, 9 x 1 1/4". Sprinkle Parmesan cheese in pie plate. Mix chicken, 1/2 cup of the mozzarella, oregano, basil, garlic powder and tomato paste; spoon over Parmesan cheese. Stir baking mix, milk, pepper and eggs until blended. Pour over chicken mixture. Bake uncovered 35 minutes. Sprinkle with remaining 3/4 cup mozzarells cheese. Bake uncovered 5 to 8 minutes or until knife inserted in center comes out clean. Cool 5 minutes.
