Golden Herring And Potato Casserole

Ingredients:


3 fillets holland herring

1/4 cup bread crumbs

1 tablespoon melted butter

6 medium raw potatoes -- diced

1 medium Onion -- sliced

3 tablespoons butter

1/2 teaspoon black pepper

1 1/2 cups milk

3 large eggs

1 tablespoon flour

1 teaspoon paprika
 

Preparation / Directions:


Clean and soak herring in cold water 12 hours, changing water 2 or 3 times. Remove skin and bones. Rinse and wipe dry with paper towel. Cut in 1/2 inch strips, crosswise. Combine bread crumbs and melted butter and cover bottom of casserole. Arrange layers of potatoes, onion slices and herring. Dot with butter and sprinkle with pepper. Repeat layers, ending with potatoes. Beat eggs with rotary beater. Gradually add flour and milk. Pour over ingredients. Sprinkle with paprika. BAke in moderate oven (375 degrees) one hour or until custard has set and potatoes are tender. Serve immediately.
