1 medium potato -- do not peel
1 pound powdered sugar
1 Cup peanut butter

Preparation / Directions:

Boil potato in jacket until fork tender. Peel potato and mash in large bowl. Add powdered sugar 1 cup at a time until a firm dough. Roll between waxed paper to 1/4" thick. Remove top layer of waxed paper. Spread peanut butter on potato dough. Roll jelly roll style. Chill until well set. Slice into pretty pinwheel candies.
