Homemade Pineapple Cake

Ingredients:

3 cups flour -- self-rising, sifted

2 1/2 cups sugar

2 1/2 sticks butter -- melted

1 teaspoon pineapple flavor

1 teaspoon yellow food coloring

6 large eggs

1 package pineapple or vanilla pudding mix -- pineapple is best

---icing

1 small cup sour cream

1 large bowl cool whip

1/2 cup sugar

1/2 cup milk

2 cans crushed pineapple w/juice
 

Preparation / Directions:


Cake: Mix all together with a mixer. Make sure all loops are gone. Use 2 nonstickpans or spray the pans. Icing: Mix well and put between layers. May frost with white icing, if desired. Keep in refrigerator. (Makes 1 big or 2 small cakes.)
