Fish In A Smoker Cooker

Ingredients:


1 fillets layer of fish on screen -- (fillets or whole fish)

1 Cup water pan seasonings

1 cup white wine - dry

1 tablespoon liquid smoke

1 medium lemon - cut up

1 tablespoon parsley - dried

1 teaspoon salt

1 teaspoon cayenne pepper

1 Cup water

3 pounds charcoal - about 3 lbs.

3 pieces hickory or pecan wood - 2 or 3 pieces
 

Preparation / Directions:


Salt and pepper fish. soak wood in water. Light charcoal and let burn down, then place wood on charcoal. Put water pan with wine, liquid smoke, parsley, and lemon in smoker cooker. Fill pan with water, being careful not to splash on fire. Place fish on greased screen over grill. Close smoker cooker and smoke for about 2 hours. Check to see if done before the 2 hours are up.
