Crawfish Au Gratin

1/2 pound green onions -- chopped
3 medium celery ribs -- chopped
1/2 pound butter
4 tablespoons flour
1 can evaporated milk
1 can evaporated milk
2 pounds crawfish tails
2 large egg yolks
2 tablespoons sherry
1 teaspoon salt and pepper -- to taste
10 ounces yellow cheese -- grated
1/2 cup parmesan cheese

Preparation / Directions:

Sauté onions and celery in butter until soft. Add flour and blend. Add milk. Remove from heat and add remaining ingredients except cheese. Pour into casserole dish. Top with yellow cheese and sprinkle Parmesan cheese over top. Bake at 350F for 15 minutes or until done. Serves 8 Fred, the Northern Cajun
